1. Place plastic wrap in a small bowl.
2. Spread coconut oil on the cling film. Break the egg inside with the Truffle Slices and Truffle Powder.
3. Tie the cling film and immerse it in a pan of simmering water for 3/4 min.
4. Remove the mixture and place it in cold water.
5. Prepare the guacamole: mash the avocados, mix them with the lemon juice, black truffle oil, truffle powder and Mexican spices. Set aside in a cool place.
6. In a small bowl, place some cling film.
7. Cover with salmon and truffle slices, top with guacamole and place the egg out of the plastic wrap, yolk side down. Cover with guacamole.
8. Cut out a circle of bread with a bowl of the same circumference. Place this circle on the guacamole.
9. Turn the bowl over onto a plate, peel off the film and serve. Enjoy chilled.
