Cold oysters
1. Open the oysters, throw away the first water and clean the lids.
2. Place the shells containing the oysters on the lids, and add a few pearls of balsamic.
3. Enjoy chilled.
Hot oysters
1. Open the oysters, discard the first water and clean the lids.
2. Remove the oyster from the shell and discard the water (3 times in total)
3. Sprinkle with chopped shallot, Parmigiano Reggiano Cream with Truffle, a little grated Parmesan and a few drops of white wine
4. Bake for 10 minutes at 180° and 5 minutes under the grill, with the oyster lid underneath.
5. Enjoy hot.
