1. Mix the fromage blanc and the fromage frais until you obtain a smooth and creamy mixture.
2. Flavor this mixture with vanilla sugar and grated lemon zest (adjust according to your taste).
3. Wash the strawberries, hull them and cut them into quarters in the bowl of a blender.
4. Add the lemon juice and sugar, depending on the ripeness of the fruit. Mix everything until you obtain a smooth coulis.
5. Divide the fromage blanc mixture into 4 pretty, slightly tall glasses.
6. Smooth the top of the fromage blanc, before pouring the strawberry coulis on top. Then add a tablespoon of acacia honey with summer truffle.
7. If you are not serving them immediately, keep the verrines of fromage blanc and strawberry coulis in the refrigerator. This dessert is best enjoyed chilled.
