50g grated Parmiggiano Reggiano 24 months of maturation

Preparation

1. Prepare the truffle polenta by bringing the water to a simmer.

 

2. Pour in the Truffle polenta in a drizzle while stirring, so as not to form lumps. Stir over low heat for about 5 minutes.

 

3. Remove from heat, add salt and grated Parmesan. Stir until cheese has melted.

 

4. Oil a baking sheet and pour the hot polenta on top. Smooth it out so that you have a 2 cm thick layer of polenta. Leave to cool for an hour (the polenta should be set).

 

5. Then cut 2 cm wide strips and form fries 5-6 cm long. Brush them with melted butter then place the truffle polenta fries under the grill of the oven until they take on a nice golden color.
