1. Divide the brie in half evenly along the thickness. Make grooves on both inner sides using a fork.
2. Mix together 2 tablespoons of mascarpone with the summer truffle pieces until you have a smooth texture.
3. Spread the mixture evenly over both sides of the Brie.
4. Close the brie. Wrap in cling film and let it rest in the refrigerator for 48 hours to allow the flavors to infuse.
5. Serve with excellent bread and a good red wine.
