WAFFLE BATTERS
450g peeled potatoes

2 eggs

2 tablespoons of crème fraîche

50g grated parmesan

salt & pepper

1 Burgundy truffle about 25g

Preparation

1. Mix the eggs with the cream, parmesan and flour.

 

2. Heat an electric waffle iron and cook the waffles for 3 to 5 minutes until all the batter is used up.

 

3. Garnish your waffles then grate a few slices of fresh truffle. Salt and pepper. Add a drizzle of olive oil.
