To rehydrate the dried summer truffles, soak them in a bowl of warm water for 30 minutes. Once the truffles are rehydrated, set them aside. Filter the truffle infusion to remove any traces of sand and earth. This infusion will serve as the basis for your sauce.  

Do you like truffles but don't know how to use them?  Here's the simplest way to prepare a delicious dish. These slices of ‘Tuber aestivum’ summer truffle are simply sliced and dried.  During the dehydration process, the truffle strips lose an average of 4 times their weight in water, which means that for a 10g jar of dried truffle strips, you need an average of 40 grams to make them, which explains the selling price.  This is a very interesting way of preserving truffles, because you can enjoy them all year round, and you can also travel with them.  In fact, this is truffle in its purest form, with a long shelf life. 

Another method is to place these thin slices with their subtle flavour (with added aromas for our recipe) on hot dishes, where they will rehydrate thanks to the heat of your dishes. Try them on mashed potatoes, tagliatelle or truffle risotto.
